MATCHA & BANANA WAFFLES
These moreish matcha waffles will keep you full for hours and give you a chill caffeine kick thanks to the addition of matcha. Easily one of our fave breakfasts ever, ever - and they come together in minutes!
RECIPE:
(Makes 6-8 mini waffles)
Waffle batter:
- Half cup of flour
- 3 tsp JENKI Matcha
- 1/2 tsp baking powder
- 1/2 tsp salt
- Half a cup of oats (roughly blended)
- 1.5 tbsp of coconut oil
- 180ml milk of choice (we used oat)
- 1 egg
- 1/2 a ripe banana (mashed)
- 1 tsp vanilla
Toppings:
- Vanilla yogurt
- Maple syrup
- Berries
- An extra shake of matcha powder
DIRECTIONS:
- Sift your flour, JENKI Matcha, salt, and baking powder into a large bowl.
- Then add your roughly blended oat in after (no need to sieve).
- Toss your dry ingredients with a whisk.
- In a separate bowl, melt your coconut oil and let it cool slightly before whisking in your milk, egg, mashed banana, and vanilla.
- Slowly add this mixture to your dry ingredients, whisking until smooth.
- Heat and grease your waffle maker, we used butter but coconut oil also works!
- Top with your favourite yoghurt, a shake of matcha powder, some fresh fruit, and a glug of maple syrup.
- Go about your day feeling happy, full, and perfectly caffeinated. Enjoy!
