WHITE CHOCOLATE MATCHA MOUSSE
This white chocolate matcha mousse is giving us life!
Not only is this mousse super high in protein but it’s got enough matcha to give you a good energy boost - plus the white chocolate is seriously heavenly.
Serves 6-8.
INGREDIENTS
- 600g silken tofu
- 90g white chocolate
- 6 tsp JENKI matcha
- 1/2 tsp vanilla paste
- 1/8 tsp salt
TO FINISH
- Whipped cream
- Shake of matcha
- Flakey salt
DIRECTIONS
- Start by melting your white chocolate, we recommend using the ‘double boiler’ method instead of your microwave if possible!
- While your chocolate is melting, put your tofu in a food processor or blender, and blend until very smooth.
- Add your melted chocolate to your tofu and blend again until combined.
- Add vanilla, salt, and matcha and blend until matcha is fully mixed in.
- Your mousse mixture should be a gorgeous green and be ready to split into servings!
- Split into 4-6 servings and put in the fridge for a minimum of an hour.
- Serve topped with some whipped cream, flaky sea salt and a dusting of matcha.
