CLARIFIED MATCHA YUZU COCKTAIL
We decided to challenge ourselves for the fourth cocktail in our Matcha Mixology series - and it was so, so worth it. Clarified cocktails seem to be everywhere right now - and while the process is daunting at first - they are surprisingly easy to make. However, heads up: they do take a bit of time.
If you’ve never heard of a clarified cocktail, they typically use heavy cream to remove all suspended particles to create a very, very, veryyyy smooth drink! We added matcha for vibrancy and the result is truly incredible. Try it and let us know what you think!
INGREDIENTS:
- 1 tbsp yuzu juice
- 1 tbsp lime juice
- 60ml gin
- Vanilla simple syrup (made by boiling 1 cup sugar, 1 cup water, 1 tbsp vanilla bean paste)
- 1 JENKI Matcha shot (1 tsp of JENKI whisked in 30ml warm water)
- 30ml heavy cream
- Coffee filters
- Garnish: lime twist
DIRECTIONS:
- Whisk your JENKI matcha with 30ml of warm water until smooth and clump-free. Pour in your heavy cream and combine.
- Add the rest of your ingredients to a glass and stir. Pour in your matcha and cream mixture and stir well. It will likely separate and that’s fine - that means it’s working!
- Cover and pop into the fridge for 15-30 minutes.
- Pop a damp coffee filter over a mesh sieve and begin to strain your mixture. This can take up to an hour.
- You may need to do this twice to get a super clear cocktail.
- Pop a large ice cube in a short glass, pour over your clarified matcha yuzu cocktail, garnish with a lime twice & enjoy!
