MATCHA CHIA PUDDING
This Matcha Chia Pudding recipe is the perfect go-to breakfast or snack! Whether you're in a rush, you're meal prepping or you simply want to indulge in this matcha deliciousness, you have to try it out!
MATCHA CHIA PUDDING
RECIPE, SERVES 1-2;
THE COCONUT LAYER
- 3 tbsp coconut yoghurt
- 2 tbsp chia seeds
- Splash of milk
THE MATCHA LAYER
- 1 tsp matcha powder
- 1 tbsp maple syrup
- 2 tbsp chia seeds
- Splash of hot water
- 100ml of milk
TO BUILD
- 3-4 tbsp granola
- Handful of blueberries
- Optional: Nut butter to top
INSTRUCTIONS:
- Add 2 tbsp of chia seeds to 2 separate Tupperware containers.
- In one, add your coconut yoghurt & a splash of milk of choice, mixing well until combined. Put the lid on and set aside.
- For the other, mix your matcha in a glass with a splash of hot water, whisking well until smooth. Add the matcha to your other chia seeds, then add your milk of choice & your maple syrup, stirring well so your chia seeds are well mixed in with the mixture.
- Refrigerate both for at least 1 hour, or ideally overnight, then when you’re ready to serve, add your coconut chia pudding to the bottom of your serving glass/ dish, followed by a layer of granola, then top with your matcha chia pudding, some nut butter, blueberries, and another sprinkle of granola.
