MATCHA PANCAKES WITH CHERRY COMPOTE
These Matcha pancakes with cherry compote have become our favourite weekend treat! They're super easy to make, super tasty and the perfect recipe for a weekend brunch!
INGREDIENTS:
Pancakes:
- 1 tbsp cane sugar
- 1/2 tsp baking soda
- Pinch salt
- 130g plain flour
- 2 tsp matcha powder
- 2 large eggs
- 300ml buttermilk
Cherry Compote:
- 450g pitted cherries
- 50g cane sugar
- 2 tbsp water
- 1 tsp lemon juice
DIRECTIONS:
Pancakes:
- Mix dry ingredients well.
- Mix wet ingredients.
- Add wet mix to dry ingredients and mix with a whisk until smooth.
- Heat a non-stick pan to medium-high heat, and add a little bit of butter.
- Pour pancake batter into pan.
- When you see bubbles form and some start to pop, it’s ready to flip! Flip and cook for another couple of minutes.
- Continue until you’ve cooked all your mix!
Cherry Compote:
- Add all ingredients to a saucepan and cook until mixture starts to boil and cherries soften slightly.
We’ve piled ours with some greek yogurt and maple syrup, but feel free to be creative! Mascarpone or whipped cream would work great too.
