MATCHA PISTACHIO GRANOLA

This energising and uplifting matcha granola with crumbled pistachios is our new favourite way to start the day! It can be dunked as a bar into yogurt or crumbled up into your morning breakfast bowl!

It’s super full of fibre, healthy fats and protein, so it keeps us going for hours! And it’s also ridiculously addictive.
INGREDIENTS:
  • 2-3 tsp JENKI Matcha 
  • 1/3 cup of agave syrup
  • 1/4 cup water
  • 1 cup oats 
  • 1/2 cup desiccated coconut 
  • 1/4 cup milled flax seeds
  • 1/2 cup ground almonds 
  • Handful of chopped pistachios 
  • 1 tbsp vanilla paste 
  • Pinch of salt
DIRECTIONS:
  1. Preheat the oven to 170°C
  2. Combine together the water, agave syrup (maple would also work) and match powder. Whisk to remove any lumps
  3. Combine the matcha mixture with the remaining ingredients
  4. Spread the granola mixture as thinly as possible, using a sheet of baking paper onto of the mixture to help you spread it evenly
  5. Bake in the oven for 30-35 minutes until hardened 
  6. Let this cool and either break it into shards or crumble over your breakfast bowl 
  7. Enjoy!
