MATCHA STRAWBERRY PAVLOVA
This Matcha Strawberry Pavlova is the ideal centrepiece dessert for a dinner party to impress your guests. We created this matcha dessert to make sure we begin strawberry season with a bang this year! It doesn't just look great, it tastes great too! The strawberry and matcha combo is one you can't miss!
RECIPE
INGREDIENTS
Meringue
- 4 Egg Whites
- 1 tsp Caster Sugar
- 1 tsp White Wine Vinegar
- 1 tsp Cornflour
- 2 tbsp Matcha Powder
Chantilly
- 200ml double cream
- 1.5 tbsp caster sugar
- 1 tsp vanilla paste
Strawberry Coulis
- 150g fresh strawberries, hulled
- 1.5tbsp icing sugar
+ Fresh strawberries and matcha powder to garnish
DIRECTIONS
- To make the meringue, whip egg whites until foamy, then add the sugar little by little and continue to whip to stiff peaks.
- Add the white wine vinegar, cornflour, and matcha powder and whip until incorporated.
- Using a dinner plate, draw a circle on a piece of parchment paper, and using this as a guide, use a spatula to shape the base of the pavlova, leaving a bit of a crater in the middle.
- Bake at 150C for 1 hour, turn off the oven, crack it open and allow to cool completely.
- To make your chantilly, whip the cream with the sugar and vanilla to soft peaks.
- For the coulis, add the fresh strawberries and icing sugar to a blender and blitz until smooth.
- To assemble, fill the crater in the meringue with cream, then top with strawberries, the coulis, and dust with matcha!
