SMASHED MATCHA CHOCOLATE DATES
These smashed matcha chocolate dates are just as delicious as they sound. Sticky dates, creamy nut butter, decadent matcha chocolate and a perfect sprinkling of flakey sea salt - what more could you possibly want?!
INGREDIENTS (makes 6 servings):
- 3 large Medjool dates
- 3 tbsp nut butter of your choice (we used PB)
- 100g white chocolate
- 1 tbsp coconut oil
- 3 tsp JENKI Matcha
- Flakey sea salt
HOW-TO:
- Line a baking sheet with parchment paper.
- Remove the pits from your dates, place on parchment and use a flat-bottomed bowl or mug to flatten your dates.
- Add a half tablespoon of nut butter directly on top of your flattened dates.
- Break up your white chocolate and add it to a bowl with 1tbsp of coconut oil.
- Use a double boiler (bowl on top of boiling water on stove) to melt your chocolate and coconut oil together.
- Once your chocolate is fully melted and combined with the coconut oil, sift in 3tsp of JENKI Matcha powder and mix until smooth and consistent in colour and texture.
- Spoon your melted matcha chocolate over your peanut butter topped dates.
- Sprinkle with flakey sea salt.
- Pop in the freezer for 3 hours minimum, your freezer will set the chocolate and peanut butter, but the dates will remain soft, sticky and so delish.
- Serve to friends or snack on them from the freezer throughout the week!
