STRAWBERRY AND MATCHA CREAM SANDO
Famous in Japan, fruit and cream sandwiches (AKA sandos) are one of our favourite treats ever. It's breakfast, desert, a sandwich, and one of your five a day - all in one!
Traditionally made with fluffy Japanese milk bread, whipped sweetened cream, and fresh fruit, we've also added matcha, and the flavour combination is just unreal.
INGREDIENTS:
- 3 Tsp Jenki Matcha
- 300ml Double Cream
- 3 Tbsp Caster Sugar
- 1 Tsp Vanilla Paste
- 4 Slices of Japanese Milk Bread
- 10-12 Large Strawberries
- Cling Film for wrapping
DIRECTIONS:
- Whisk together the double cream, sifted matcha powder, vanilla and caster sugar until the mixture thickens
- Cut a few of the strawberries up, leaving at least 6-8 whole to run down the middle of the sandwich
- Get two slices of milk bread and add a layer of the matcha cream to each
- Arrange 3-4 strawberries diagonally down the slice and fill the rest of the slice with the remaining whole and chopped strawberries in the gaps either side
- Spread on more of the matcha cream to fill in the gaps between the strawberries and then place your other slice onto
- Wrap this tightly in clingfilm and refrigerate for at least 30 minutes
- Once refrigerated, unwrap the sandwich, cut off the crusts and slice diagonally to reveal the beautiful line of strawberries!
